Altare's Dogliani is made from 100% Dolcetto grown on primarily Terra Rossa (red clay) with some Terra Bianca (white calcareous clay). All fruit is destemmed and fermented in 80% concrete and 20% stainless steel tanks with indigenous yeasts, then aged for 10 months in stainless steel.
Light purple in the glass with garnet highlights and aromas of fresh plums, black cherries and earth. The palate is sleek and refershing with fine-grained tannins and a firm mineral core that flow into a persistent, spicy and mineral finish.
No pesticides or herbicides are used. Nicholas has never sought certification because he is not "interested in a stamp on a paper, but has always been interested in obtaining a natural product.”
