Mezcal

Mezcal is the distilled liquor produced from fermented agave plants, principally from the state of Oaxaca, Mexico. What separates it from Tequilla is the agave plant used. Roughly 90% of Mezcal is distilled from the agave variety Espadín, while Tequila is distilled with 51% Blue Agave by law.
