Nostra Signora Della Neve is the most important vineyard in the blend of this metodo classico rosato of Nebbiolo and Pinot Noir. It is located in Roddino, where the Barolo hills rise into the Alta Langa. This metodo classico is made of Nebbiolo and Pinot nero (the latter to counterbalance the strength of the former), saignée and a minimum of 48+ months on the lees with <1g/L of dosage.
The juice stays in contact with the skins at low temperatures for just a few hours. The wine is then bottled for a second fermentation the following spring after the harvest and spends approximately thirty months on its lees.
The Signora della Neve is the most important vineyard for the metodo classico blend. Located in Roddino, it lies right between Barolo and Alta Langa, magnificently steep, all work must be done by hand. The soil, calcareous and poor, forces the vines to dig deep, resulting in a great expression of minerality.
