A blend of different parcels at different elevation and soil composition across Arbois. Direct press and fermentation with indigenous yeasts in tank. Aged for 18 months in a combination of stainless still, barrel and foudre.
Aromas of Russet apples, wet stones and earthy lemon lead to more savory pistachio butter and fresh almond notes. Great concentration.
