100% Sauvignon Blanc from 35- to 40-year-old vines near the village of Thésée.

The soil is gravelly clay-limestone. Grapes are manually harvested and undergo a 3-week fermentation. The wine is then aged in 90% stainless steel, on lees, and 10% in old barrels.
