100% Pinot Noir planted in 1958 on red marl.

50% whole-cluster, 50% de-stemmed, cold maceration for 10 days after harvest. Fermentation lasts up to 20 days in wood tank. The wine is aged in barrel, 20% new for 12 months, and 3 months in tank before bottling. The wine is then aged in bottle for 3 months before release.

The finesse of the Guillemots’ wines comes from their charming rustic edge. “Les Grands Picotins” enjoys bold aromas of raspberries with that quintessential Burgundian Pinot bramble.
