Experience is irreplaceable, understanding the potential of each
plot is essential, which is why the winemaker generally improves with age.
The vast majority of Burgundy wine-growing soils combine clay and limestone, and are therefore aptly called clay-limestone. 
However, the proportions of clay and limestone vary constantly
from one hillside and one plot to another, the soils are very heterogeneous, even on the same estate.
If the notion of terroir is often put forward, other parameters such as
exposure, altitude, and the age of the vines must be taken into account when producing wine.
The Mâconnais, of which we are a part, is renowned for its high-quality whites, all made with Chardonnay. The share of red grape varieties
(Gamay and Pinot Noir) is rather limited, although certain terroirs and certain exposures allow for the production of excellent red wines.
For example, we have plots with very clayey soils that retain
moisture for a long time because they filter very little and are very suitable
for producing round and rich white wines.
On the other hand, the fairly chalky soils of Cruzille are more suitable
for the production of Pinot Noir.
