100% certified organic Chardonnay from Champagne

Strictly without the addition of oenological or other inputs. Total maceration before and after bleeding for 7 days, then vinification at 100% in French oak barrels of 5 to 10 wines, all without added sulfites. Winemaking without enzymes, tannins or charcoal, no chaptalisation, alcoholic fermentation with indigenous yeasts, malolactic fermentation with indigenous bacteria, without acidification or de-acidification, the finished wine is neither stuck nor filtered before bottling.
