Le Rocher is a distillery at a higher elevation, creating their Clairin in the style of Jamaican single pot still by boiling wild sugar cane juice into syrup.
Le Rocher is produced from syrup, not from pure juice. The syrup is slowly boiled in order to preserve all the aromas of the rum, while retaining the character of the of cane. Le Rocher is an artisanal single pot still rum, bottled 'still proof' without any dilution.
The use of 30% dunder (Rum "Sour Mash") helps manifest wild, brazen aromas and flavors. Scents of coconut husks, overripe bananas, petrol, sea salt and cinnamon abound.
