The sandy and clay soil reaches so deep that no irrigation is ever needed. Clay endows the wine with longevity and acid extract, while sand gives the wine delicacy and softness. Manenti practices biologic farming with minimal intervention in the vineyard.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eCerasuolo di Vittoria became a DOCG in 2005, the only DOCG in Sicily. In the last century the Ragusa province was so deeply affected by the phylloxera epidemic that most farmers, having witnessed the devastation of their vineyards, decided to change their crops into fruit and vegetables.
