100% single-vineyard Listán Negro from volcanic, sandy loam soil.

The grapes are de-stemmed, then the stems are added back in layers. Fermentation is in stainless steel with native yeasts with a 30 day maceration. Ages for one year in used foudre.

It has a bright ruby color and a very expressive nose, aromatic with notes of dry rose petals, talcum powder and with a spicy twist, ashy and very volcanic, with notes of wet pumice stone.
