90% Palomino and 10% Pedro Ximenez
Palomino is a mostly neutral grape that doesn't evoke strong aromatics – it is primarily used to make Sherry, providing a "blank canvas" for the future complexities of various Sherries. Bodegas Forlong set out to take this neutral grape and apply enough care and precision in the winemaking that the resulting wine would have an exceptional character.
Full and round, but with a nervy acidity, with an incredible mineral purity that brings to mind dry, chalky Chablis. Crisp apples, lime, and crushed seashells.
Farmed certified organic and using biodynamic principles, this Blanco is spontaneously fermented and ages for 4 months on the lees in stainless steel. Minimal sulphur is added at bottling, but not elsewhere in the winemaking process.
